however, my Mac tells me I am running the latest: Mac OS X V10.6.8
You are running the latest version of OS X 10.6 (Snow Leopard). So, if you check for updates, it says 10.6.8 is the latest (for Snow Leopard). However, that does not mean you cannot install later releases of OS X. I looked up 'iMac 10.1' and got back these possible models
All of them are more than recent (and powerful) enough to run the current release of OS X, which is called El Capitan (10.11). It is free. Open Mac App Store on your iMac. It is probably on the main App Store screen somewhere, but you can also do a search on 'os x el capitan' from the search field.
NOTE: Before you do a major upgrade of your system, be sure to have a recent backup of your data. Upgrading from 10.6.x to 10.11.x is a major jump. Also, it is possible that some of your third-party Mac software may not be compatible with the latest OS X.
